Top Tips: Try adding diced peppers to the rice to add even more colour. If no mint sauce available, just use plain yoghurt and cucumber. Tandoori fillets can also be used as a starter, no need to cook the rice, just serve with the raita as a dipping sauce.

Top Tips: Try topping with grated cheese or chopped spring onions. Add extra tinned beans to the chilli, e.g. butter beans or lentils.
BBQ Quorn Fillet with Boston Beans
Top Tips: Try adding sweetcorn to the baked beans. If available add a slice of tomato to the bun too. Alternatively you can serve the BBQ fillet with the beans and mashed potato instead of burger buns.
