Equipment needed: Mixing bowl, oven tray(s), sieve
Preheat your oven to 180°C fan/200°C non fan/gas mark 6.
Mash the bananas. Then add the vegetable oil and sugar. Mix well.
Sieve the flour, baking powder, cinnamon and salt over the banana mixture, then add the dried fruit/nuts/chocolate if using. Mix until just combined (important not to overmix).
Bake in a lined tin for 20 minutes. Check and cover with foil if the cake is very brown at this point. Bake for another 20 minutes or until a skewer comes out clean.
