red lentils

Equipment needed: Hob, large saucepan and blender/food processor
Peel onions and finely dice. Crush garlic.
Heat oil in a large saucepan over a medium heat.
Add the onion and garlic and cook for 2-3 minutes.
Add the red lentils, chopped tomatoes, vegetable stock and and bring to the boil.
Reduce heat and simmer for 20 minutes or until the lentils have softened.
Remove from heat and liquidise with a blending stick/food processor, add more water if too thick.
Serve with bread or croutons.
You can swap out tinned tomatoes for fresh tomatoes.
Use chilli powder instead of paprika for a different flavour.
