Equipment needed: Hob, large saucepan and blender/food processor
Heat oil in a large saucepan and fry onion and garlic, until clear.
Chop carrots and sweet potatoes. Add to pan and cook for 5-10 minutes.
Slice the pepper and add to pan with chilli powder, ground cumin and oregano.
Stir in chopped tomatoes and vegetable stock and cook until sweet potato is soft.
Remove from heat and liquidise with a blending stick/food processor.
Add Kidney beans.
Season with salt and pepper and serve.
