Equipment needed: Roasting tray, large pan, oven, hob & mixing bowl.
Preheat your oven to 180°C fan/200°C non fan/gas mark 4.
Place prepared peppers, courgettes and onions in a roasting tray. Toss with olive oil, salt and pepper. Roast in oven for around 45 minutes, or until vegetables are cooked.
Heat a large pan of water. Once boiling, add salt and add pasta. Cook for around 12-15 minutes, uncovered, until pasta is just cooked. Drain into a colander.
Combine pasta, vegetables, lemon zest and juice, pesto and parsley whilst pasta and vegetables are still warm. Taste for seasoning and add more salt and pepper if needed.
