Equipment needed: Oven, roasting tray(s) & mixing bowl
Preheat your oven to 180°C fan/200°C non fan/gas mark 4.
Chop the cauliflower into small florets and place them on a large roasting tray. Roast cauliflower florets in oven for 30-40 minutes (until just browning) with olive oil, salt and pepper.
Mix together the lemon juice, olive oil, garlic and chilli flakes to create the dressing. Season with salt and pepper as needed.
Chop the olives, capers and parsley.
When the cauliflower is ready, take out the oven and mix everything together in a bowl. Leave to cool.
