Equipment needed: Hob and saucepan.
Heat some oil in a large frying pan, over a medium high heat cook the onion for 3 minutes, until beginning to soften. Add the garlic and cook for a further 2 minutes, stirring.
Add the kidney beans, sugar, tomato puree, vegetable stock and simmer for 20 minutes, stirring occasionally.
Finally add the Quorn mince and heat through for 10 minutes.
Season with salt and pepper and stir in the fresh coriander.
Serve with Nachos, over a jacket potato or with rice. Try brown rice for a nutty flavour. It takes a little longer to cook than white rice so put it on to cook before you start the chilli.
