Mushroom and Butterbean Orzo

orzo (or broken spaghetti)

Equipment needed: Frying pan, chopping board, colander and knife 

Method

  1. Thinly slice the mushrooms and leeks.

  2. Drain and rinse the butterbeans and set aside. 

  3. Heat the oil in a large saucepan over a medium heat.

  4. Add the mushrooms and leeks, season with a pinch of salt, plenty of black pepper and the paprika, and cook for 5 minutes until softened, stirring regularly. 

  5. Stir in the orzo and cook for 1 minute, allowing it to lightly toast. 

  6. Add the butter beans, pour in the water and crumble in the stock cube. Stir until well combined. 

  7. Bring to the boil, then reduce to a gentle simmer. 

  8. Cook for 10 to 12 minutes, stirring regularly, until the orzo is tender and the sauce has thickened to a creamy, risotto-like consistency. If needed, add a splash more water. 

  9. Serve with extra black pepper and an optional garnish of fresh parsley

Substitutions

  • Any mushroom can work in this recipe, loose button mushrooms can often be cheaper
  • If you don’t have orzo, risotto rice or broken up spaghetti are good alternatives
  • Butterbeans can be swapped with cannellini or chickpeas
  • Leeks can be swapped with spinach or courgettes
