Hearty Bean and Lentil Pie

dried red lentils (washed)

skimmed milk

Equipment needed: Saucepan(s), chopping board and knife

Method

  1. Peel and cut the sweet potatoes into small chunks. Place them in a large saucepan, cover with water and bring to the boil. Simmer for 1215 minutes, or until you can pierce easily with a fork. 

  2. Drain the potatoes and set them aside.

  3. Using the same saucepan, add the onion and carrots with a small splash of water or a little oil. Cook for 3-5 minutes until softened.  

  4. Add the red lentils, chopped tomatoes, tomato puréedried mixed herbs, black pepper, salt, paprika, stock cube, and water. Stir thoroughly.  

  5. Bring to the boil, then reduce the heat and simmer for 2025 minutes, stirring regularly. 

  6. The lentils should become soft, and the mixture should thicken considerably. If the mixture looks dry, add a small amount of water in increments and stir.  

  7. Stir in the kidney beans and cook for a further 5-10 minutes. The finished filling should be thick and spoonable, rather than runny. 

  8. Meanwhile, mash the cooked sweet potatoes while they’re still warm. Gradually add the milk, mixing as you go. Add only as much as needed to achieve a thick, creamy mash that holds its shape. Stir in the vegetable spread and some black pepper if using. 

  9. Spoon the lentil and bean filling into the saucepan and carefully spread the sweet potato mash evenly over the top. 

  10. Cover with the lid and place over very low heat for 35 minutes, until the topping is hot. Alternatively, serve immediately if both components are already hot. 

Top Tips:

  • Don’t add all the milk the the mash at once  keeping the mash thick is important so it sits on top of the filling. 
  • This recipe is a great way to use up any vegetables you have to hand. Peas, spinach, kale or frozen mixed veg work well and are an easy way to add extra goodness to your meal
  • If you have access to an oven, transfer the filling to an ovenproof dish, spoon the potato on top, make peaks by gently running a fork through the top and grill for 10 minutes until golden
