As part of our partnership with ProCook, we’ve teamed up with Great British Bake Off contestant, Steven Carter-Bailey who has created an exclusive recipe to celebrate FoodCycle’s 15th Birthday. It’s based around vegetables that can be interchanged making it a perfect recipe for a FoodCycle community meal celebration cake!
To make an 8inch, two layered cake (20 slices), switch the drop down to serve 20.
Preheat your oven to 175°C fan/195°C non fan/gas mark 5 then grease and line cake tin(s)/tray bake tin(s0.
Combine the self raising powder, baking powder, salt, ground cinnamon, mixed spice, nutmeg, light brown sugar, dark brown sugar and grated vegetables into a bowl.
In a separate bowl combine half the vanilla extract, vegetable oil and eggs.
Combine the two bowls together and stir thoroughly.
Put the mixture into the cake tin(s) and bake for 30-35 minutes until golden brown.
Meanwhile, make the frosting by creaming the butter and icing sugar together, until pale and fluffy. Gently whip in the cream cheese and rest of the vanilla extract. Refrigerate until needed.
Remove the cake from the oven once baked and cool for 10 minutes before transferring to a wire rack.
Spread the frosting onto the cooled cake. Serve and enjoy.
