Banana muffins

Banana Muffin

bananas (blackened and peeled)

vegetable or sunflower oil

light brown sugar

plain flour

baking powder

tsp

cinnamon

dried fruit and seed mix

oats

mixed seeds

Equipment needed: Mixing bowl, oven and muffin tray

Method

  1. Preheat your oven to 160°C fan/180°C non fan/gas mark 4.

  2. Mash the banana in a medium bowl with a fork, then mix in the oil and sugar until combined.

  3. Add the flour, baking powder, cinnamon and dried fruit and seed mix. Mix until well combined.

  4. Line a cupcake (or muffin) tray with cupcake cases and fill them ¾ full of the mixture.

  5. Add the oats and mixed seeds on top of muffins.

  6. Bake for 25 min.

  7. Leave to cool on a wire rack. Serve and enjoy!
