Equipment needed: Mixing bowl, oven and muffin tray
Preheat your oven to 160°C fan/180°C non fan/gas mark 4.
Mash the banana in a medium bowl with a fork, then mix in the oil and sugar until combined.
Add the flour, baking powder, cinnamon and dried fruit and seed mix. Mix until well combined.
Line a cupcake (or muffin) tray with cupcake cases and fill them ¾ full of the mixture.
Add the oats and mixed seeds on top of muffins.
Bake for 25 min.
Leave to cool on a wire rack. Serve and enjoy!
