Asparagus Spaghetti

Asparagus Spaghetti

red chilli's (deseeded and finely chopped)

g

wholemeal spaghetti

2

garlic cloves (peeled and crushed)

g

asparagus (ends trimmed and cut into lengths)

2

lemons (zested and juiced)

4

tbsp

rapeseed oil

g

leeks (cut into lengths, then thin strips)

Equipment needed: Hob and frying pan

Method

  1. Cook spaghetti (according to instructions on packet), adding the asparagus for the last 3 mins.

  2. Meanwhile, heat the oil in a large frying pan and add the leeks and chilli and cook for 5 mins. Stir in the garlic and lemon zest and juice and cook for a few minutes more.

  3. Drain and add the pasta to the pan with a bit of the pasta water and toss everything together until well mixed.

  4. Serve and enjoy!
