In a poll carried out by charity, Hubbub they predict that 24 million pumpkins carved for Halloween will go to waste. So in true FoodCycle style we asked FoodCycle staff and volunteers to share their favourite recipes to use up any leftovers.
Roast butternut squash and red onion with tahini and za’atar from Anne who volunteers at FoodCycle Islington, the recipe uses butternut squash but it can easily be swapped for pumpkin.
Regional Manager for the South West, Alex shares her favourite recipe for Vegan Katsu Curry and says it works really well with pumpkin.
This recipe for Easy Pumpkin Bread Rolls was shared by our Head of Programmes, Sophie.
Carly our Head of Marketing, roasted her pumpkins seeds in the oven with honey and salt for a yummy snack and she’ll be using the rest of the flesh to make these dog treats for her lucky pup.
And finally, Fiorella a volunteer at FoodCycle Clacton shares their Halloween menu of Pumpkin Soup, Roasted Butternut Squash Risotto, rounded off by Fallen Apple Sponge. Delicious!
