Pancake Day Recipe from FoodCycle Monkchester

To celebrate Pancake Day 2022, our lovely volunteer Elena Kassis at FoodCycle Monkchester Road has kindly shared her failsafe American pancake recipe which has been tried and tested on our Newcastle guests. She suggests serving with maple syrup and fresh blackberries but feel free to use any other leftover fruit you fancy… ⁠

Ingredients ⁠
1 1/2 tsp baking powder⁠
200g self-raising flour ⁠
1bsp golden caster sugar⁠
3 large eggs ⁠
200ml milk⁠
25g melted butter⁠
vegetable oil, for cooking⁠

Method ⁠

  • Mix dry ingredients with a pinch of salt in a large bowl⁠
  • Create a well in the centre and add eggs, milk and melted butter⁠
  • Whisk together until smooth ⁠
  • Heat oil in a non-stick pan and pour batter to make rounds approx 8cm wide ⁠
  • Cook for 1-2 minutes on each side or until tiny bubbles start to form on the surface of the batter⁠
  • Enjoy!
