A dessert from surplus: Our top vegetarian recipes

Every week our volunteers are challenged with turning surplus food into delicious and nutritious three-course meals. They’ve gotten pretty creative at transforming a mismatch of food into a vegetarian feast. As it’s National Vegetarian Week, we’ve asked them to share some of their favourite recipes, so you can make a three course meal the FoodCycle way! To finish, we have a dessert from FoodCycle Liverpool! 

Banana Fritters a’la FoodCycle Liverpool

Ingredients

100g self-raising flour

1tsp bicarbonate of soda

1/4tsp ground cinnamon

1 egg

150ml milk

Vegetable oil for frying

3 bananas

Clear honey to serve

Method

Put the flour, bicarbonate of soda and cinnamon into a bowl. Make a well in the centre and add the egg and half the milk and mix until you have a smooth batter. Gradually add the rest of the milk.

Heat the vegetable oil in a deep pan.

Cut the peeled bananas up to your desired size but make sure the pieces aren’t too small.

Dip the banana pieces in the batter and then carefully lower in the pan until golden brown. Cook a few pieces at a time then remove and drain on kitchen paper. For extra sweetness serve with honey on the side for dipping!
