Equipment needed: Saucepan and grater
Peel and grate the carrots.
Heat a saucepan over medium heat and add oil. Sauté the grated carrots for about 5 minutes until they start to soften.
Stir in the spices, sugar, orange zest and juice, and water.
Reduce the heat to low and let it simmer gently for at least an hour, stirring occasionally. Add more water if needed.
The mixture should become rich, jammy, and unctuous.
