Equipment needed: Baking tray(s), and mixing bowl and cooling rack
*A serving for four makes about 12 small cookies.
In a mixing bowl, beat together the butter and powdered sugar until light and creamy
Add the all purpose flour and mix well until combined.
Add vanilla extract if desired.
If the mixture seems too wet, add some more flour and mix together until combined.
Leave your mixture in the mixing bowl, cover with cling film and place in the fridge for about an hour.
Preheat your oven to 180°C fan/200°C non fan/gas mark 6.
After an hour, take the mixture out of the fridge.
Line a baking tray(s) with parchment paper.
Take a walnut size piece of your mixture and roll in your hands.
Place this on your baking tray, once you’ve filled your tray flatten each cookie slightly with your hand.
Put the cookies in the oven for about 10 to 12 minutes or until your cookies start to turn a light golden brown. take out of your oven place your cookies on your cooling rack until they’re cooled enough then place them in your biscuit tin these cookies keep up to a week in your biscuit tin
Leave the cookies to cool on a cooling rack until they’re cooled enough, then place them in a biscuit tin or serve. These cookies keep up to a week in your biscuit tin!
