Broccoli, Brussel Sprout & Pea Soup

onion(s) (peeled and chopped)

broccoli(s) (chopped)

brussels sprouts (peeled and chopped)

400

g

tinned peas

potatoes (peeled and chopped)

800

ml

vegetable stock

Equipment needed: Hob, large saucepan and blender/food processor

Method

  1. Fry onions in oil for about 10 minutes over a medium-low heat.

  2. Add potatoes and fry for a further 5 minutes.

  3. Add sprouts, broccoli, tinned peas and vegetable stock.

  4. Bring to the boil, then leave to simmer for 20 minutes.

  5. Remove from heat and liquidise with a blending stick/food processor. Add salt and pepper to taste.
