Herby Potato Salad with Mustard Dressing

olive oil

lemon juice

Equipment needed: Hob, large saucepan, mixing bowl & colander

Method

  1. Chop potatoes into large chunks (peel if necessary). Boil in salted water until just cooked. Drain into a colander.

  2. Roughly chop dill, parsley and chives. Finely dice celery and red onions. Set aside.

  3. Mix olive oil, mustard and lemon juice with salt and pepper to make the dressing.

  4. Combine the dressing, potatoes, celery, red onions and herbs. Taste for seasoning and add more salt and pepper if required.
