Tomato and Parsley Salad

Equipment needed: Mixing bowls & colanders

Method

  1. Dice the cucumbers and onions. Place in a colander over a bowl and sprinkle with some salt. Mix gently and set aside for one hour.

  2. Prepare tomatoes: if using cherry or baby plum tomatoes, slice into halves; if using larger tomatoes, slice into chunks.

  3. Place these into another colander placed over a bowl and sprinkle with salt. Set aside for one hour.

  4. Combine olive oil, lemon juice, mustard, black pepper and a pinch of sugar in a jar and combine.

  5. Combine all the ingredients in one bowl and mix gently. Add extra salt and pepper if required.
