To celebrate the arrival of summer, we asked our FoodCycle volunteers what they’ve been whipping up in community kitchens across the country…

Grape and Raspberry Clafoutis from FoodCycle Benwell  

Ingredients 

5 eggs  

125g melted butter 

200g flour 

50g caster sugar  

½ pint milk  

1tsp vanilla extract 

800g grapes and raspberries or any leftover fruit you fancy 

Method  

  • Preheat the oven to 180 degrees 
  • Grease a large baking tray 
  • Put grapes and or raspberries or any other fruit in the bottom 
  • Make a sweet batter by mixing together the eggs, vanilla extract, melted butter flour, sugar and milk (batter should be quite liquid but thicker than water) 
  • Pour batter over fruit and cook in the oven for about an hour until the mixture is golden brown on top and doesn’t wobble  
  • Serve by itself or with custard or vanilla ice cream 
Asparagus Salad Recipe from FoodCycle Exeter  

Ingredients   

Salad: 

1 head of lettuce roughly chopped  

1 cucumber deseeded and chopped into half or quarter slices  

500g baby plum or cherry tomatoes halved or quartered 

2 red or yellow peppers deseeded and thinly sliced 

4 spring onions or 1 red onion thinly sliced 

A handful of bean sprouts  

A handful of basil torn or chopped 

250g asparagus tough bottoms chopped  

Dressing: 

4 tbsp of olive oil  

A good pinch salt 

A good pinch black pepper 

Juice of 1 citrus fruit (lemon, lime or grapefuit) 

2 tbsp balsamic vinegar  

Method 

  • Heat a pot of water, when it gets to a boil put all the asparagus into the pot to blanche (this should only take a couple of minutes so don’t forget about them)  
  • When they have softened a little but still have their bite and vibrant colour, drain the asparagus into a colander and run them under cold water to stop them cooking further because we don’t want soggy asparagus 
  • In a large bowl mix all the salad ingredients 
  • Whisk together the dressing ingredients (or use an old jar and shake), season to taste and poor over the salad 
  • Toss everything together and serve 
Summer Veggie Curry from FoodCycle Westgate  

Ingredients 

1 onion, finely chopped 

2 bulbs garlic, finely chopped 

1 thumb sized piece of ginger, finely chopped 

1 tsp cayenne pepper 

1 tsp smoked paprika 

2 tsp garam masala 

2 tbsp groundnut oil  

2 tbsp of tomato puree  

2 fresh red chillies finely chopped  

2 tablespoons of ground almonds 

1 tsp cumin 

1 tsp coriander    

1 tin chopped or plum tomatoes  

1 tin coconut milk 

500g jersey or new potatoes  

1 sweet potato, chopped into chunks  

Half a butternut squash, chopped into chunks 

2-3 carrots, chopped into chunks  

Half cauliflower, chopped into chunks 

500g runner or fine beans 

½ a bunch fresh coriander, finely chopped 

½ a bunch of fresh mint, finely chopped 

Method 

  • Parboil potatoes for 8-10 minutes and drain  
  • Meanwhile make the curry paste by blending together the dried spices, with chillies, ground almonds, groundnut oil and tomato puree 
  • Sweat onions, garlic and ginger in a large cooking pot on low heat until soft then add the curry paste and cook for a further 2-3 minutes 
  • Add tinned tomatoes, parboiled potatoes, sweet potatoes, butternut squash, carrots and cauliflower with a pint of water and cook until tender then add coconut milk and simmer 
  • Meanwhile, blanche beans in boiling water for a few minutes then drain and run under cold water to stop them cooking 
  • Once the curry sauce has reduced by one third, turn off the heat and add the beans 
  • Serve with basmati rice cooked in coconut milk, a few cherry tomatoes and garnish with the chopped herbs

🎾 A huge shoutout to our friends at Danone for treating some of our amazing volunteers (and a few staff too!) to an unforgettable day at Wimbledon 💚

On 5th July, a group of lucky volunteers from all over the country were picked in a random draw and got to enjoy top tennis action plus a tasty lunch and afternoon tea.

We’re so grateful to Danone for recognising the time, care and energy our volunteers give every week. You are the heart of FoodCycle and we love being able to say thank you in fun and meaningful ways like this.

PROJECT HIGHLIGHT

Well done to the fantastic team at FoodCycle Weoley Castle for another warm and welcoming community meal 💚

This week, they served 22 guests, welcomed a brand new hosting volunteer, and dished up a delicious three-course menu featuring:
🥣 Roasted cauliflower and fennel soup
🍅 Ratatouille with mash and side salad
🍊 Orange drizzle cake

We also want to give a huge shout-out to Jacky, who hit an incredible milestone of 400 volunteer hours! Thank you for your dedication and the difference you continue to make every week 🎉

50 guests, a buzzing dining room and a whole lot of love in Clacton this week! 

The sun was shining, the queue was full of chatter, and the energy inside was just as warm 💚

A huge shout out to newly graduated Project Leader Yvonne, who served up her first official meal made entirely from fresh surplus ingredients and nailed it! 👏

Every guest left with a grocery bag to take home, and Collection PL Chris worked his usual magic, making sure nothing went to waste. Even his chickens were happy with the scraps 🐓

Great food, great people, great Monday. Clacton, you rock!

Meet Nathan, a cooking volunteer at FoodCycle Hucknall and Broxtowe-Aspley in Nottinghamshire.

At 44, Nathan was looking to shake off the routine of work and do something more fulfilling with his time. He joined FoodCycle to give back, but found much more than he expected – growing in confidence, building new skills and rediscovering his passion for cooking.

Volunteering has even inspired a new career, as Nathan recently became a volunteer co-ordinator for his local council.

We love hearing how FoodCycle makes a difference not just for guests, but for our incredible volunteers too.

Halfway there, Harry! 🏃‍♂️🔥

Huge shoutout to Harry Barham who recently completed his 5th half marathon in his epic challenge to run 10 half marathons in support of FoodCycle and FareShare North East – that’s 131 miles in total!

His most recent run was a scorcher, but Harry powered through with determination and a whole lot of heart.

He’s running to help tackle food waste, food poverty and support stronger communities and he’s already halfway to the finish line.

Let’s cheer him on and help him hit that fundraising goal 💚

Meet Rosie, a 73-year-old volunteer from Worcester who joined FoodCycle to give back in her retirement, and found so much more.

From building confidence in the kitchen to making new friends, Rosie says volunteering has become a meaningful and joyful part of her week.

“I really enjoy every session. I can’t always go weekly, but FoodCycle is so flexible – you just sign up when you can. I tell everyone I know about it!”

Friendships that go beyond the kitchen 💚

We absolutely loved seeing this update from our brilliant Clacton volunteers, who spent a sunny evening in Frinton enjoying a walking quiz, fish and chips, and plenty of laughs!

Sixteen of the team came together for a bit of friendly competition and fun, followed by a delicious beach hut supper and lots of chat about FoodCycle with curious passers-by.

Moments like these show just how strong the sense of community is among our volunteers. It’s more than just cooking and serving meals, it’s about connection, friendship and supporting one another.

Thank you to everyone who made the evening so special. We’re lucky to have such a wonderful Clacton crew!
